“I received my undergraduate degree in biology, and was required to have an External Learning Experience where we had to work in a career field of interest and then write a report at semester’s end. I chose to work in the N.C. Extension Office on campus with a dietitian. I helped develop two different pilot programs called the Healthy Eating for Life Program and Give Your Heart a Healthy Beat. I thoroughly enjoyed my experience and chose to pursue a career in dietetics.”
Favorite class: Environmental Nutrition with Dr. Bill Landis.“I loved seeing nutrition's ‘big picture’. I learned so many things about how industrial growth, toxins and biologically engineered foods are having an impact on the environment. We looked at everything from the local farmer working a cyclical organic farm to production on a world scale and how other countries are affected. It changed my thinking and how I relate to nutrition. It gave me a whole new perspective.”
Why Meredith?: “I was drawn to Meredith in 1996 after my undergraduate degree when a faculty member took the time to sit down and talk with me about my potential future in the field of dietetics. No other school was willing to meet with me. She gave me confidence in my choice.”

“I used to work as a research scientist at UNC-Chapel Hill and as a motivational speaker for Weight Watchers. Coming back to school has enriched my life. The way I see the world and nutrition has changed, as well as how I see myself and my relationships with my peers. Being a student has instilled the importance of what we are learning and can learn and how to use this information to help others.
I am a scientist and bring a practical and scientific side to nutrition. I am a questioner by nature so I am constantly challenging others to support their claims. Being from a true science background, I understand the importance of being able to prove things and support claims.”
Favorite Class: I learned the most in my Environmental Nutrition class with Dr. Bill Landis. It was a subject I knew little about but I loved it so much that I am doing my thesis on the topic. To me, it is a part of nutrition that is less explored than other areas.”
Why Meredith?: “We get a lot of individual attention. Professors are always willing to help a student outside of class.”
