The Curriculum
After completing core requirements, students can select from a variety of elective courses that match their personal or professional interests. Individual projects and research will further your area of specialization.
Core:
Through core coursework, students receive a solid foundation in the techniques for locating the most up-to-date information in the field, the research process, communicating nutrition concepts and information to professionals and the public, and the function of nutrients in humans.
Electives:
Students can choose from a range of elective courses from lifecycle nutrition issues, obesity, sports nutrition, to the environment. New topics are continually explored through special elective offerings.
Research:
Students develop an expertise in a specialized area of foods and nutrition through the research process. Individual and group research projects provide students with the opportunity to review the knowledge base on a particular topic, develop an important research question, design and administer their own study, and present their findings.
