Meredith Research Published in Nutrition Journal
An article by Bill Landis, Meredith College Associate Professor of Human Environmental Sciences, and graduates of Meredith’s Master of Science in Nutrition program was recently published in the “Journal of Hunger and Environmental Nutrition.”

The article, titled “Community Supported Agriculture in the Research Triangle Region of North Carolina: Demographics and Effects of Membership on Household Food Supply and Diet,” was written by Landis and Tracy Smith, with assistance by four others.

The researchers surveyed Community Supported Agriculture (CSA) members belonging to five farms in the Research Triangle area.

According to Landis, “a key finding of the study was that individuals that join CSAs consumed significantly more servings of fruits and vegetables and a greater variety of these foods than non-CSA controls.”

The research also found that CSA members tend to be Caucasian, middle-aged, married, economically secure and highly educated. Members cited supporting local farms, healthier eating and knowing where your food comes from as major reasons for joining a CSA.

Landis is the program coordinator for Meredith’s foods and nutrition program, and is the director of the M.S. program in nutrition.
